China Temporarily Bans British Cheese Imports

The Chinese officials were reportedly dissatisfied with it's maintenance and storage , raw milk transport temperatures and air sanitization

However the dairy they visited does'nt export it's products to China

U.K. farming minister George Eustice has called for restrictions to be lifted "as soon as possible"

"British cheese is the best in the world and produced to the highest safety and quality standards , so it is disappointing that China have put a temporary block on cheese imports" he said

"Food inspectors will now visit all factories exporting cheese to China demonstrate their high standards , so these restrictions can be lifted as soon as possible

The ban applies to all cheese made after May 1st , which is also the date that a new food and safety law came into effect on the Chinese mainland

As part of their audit in Europe , Chinese officials found problems at one British dairy and are now working with the U.K.'s food standards agency

The FSA is set to carry out it's own compliance checks and once the issue is cleared , the   temporary suspension is expected to be lifted

Tasting Tips;

Designing the Tasting:

Choose between 4 and 6 unique Cheeses and Complamentry Wines.

How much Cheese and Wine to buy:

A rule of thumb is to serve 1 ounce of cheese per person for each cheese being tasted, and to pour 2 ounces of wine per glass for each wine being tasted.

Order of Tasting :

Always start the tasting with the mildest cheeses and the lightest wines , and work toward the stronger cheeses and full bodied  and sweet wines.

Pairing Partners :

Sample fresh,  unripened cheeses with a light rose' or sparkling wine,try soft cheeses with a bright Pouilly-fume', and blue veined cheeses with a sweet Sauternes.

Milk Jam

Ingredients :

                  4 cups whole milk

                  1 1/2 cups sugar

                  1 teaspoon madagascar vinillia

                  1/2 teaspoon baking soda

                  1/2 teaspoon kosher salt

Directions :

Add all ingredients to a heavy bottomed sauce pan , over medium -   high heat , Bring to a boil whisking constantly and lower heat to medium, next you want to reduce milk mixture by half , wisking constantly , for approximately one hour, or until candy thermometer inserted into pot reads 225°F., the milk should caramelize to a medium golden brown in colour , and have a consistency slightly thicker than maple syrup , bear in mind that the milk jam will thicken a bit as it cools , so you may want it a bit thinner if you plan to use it in baking or drizzling , store in a tightly sealed container in the refridgerator for up to a week
